Richard often makes this exact tater tot breakfast casserole as a family meal for his team at Hattaway’s on Alder before brunch service begins.

He shared it with us, and we immediately knew you would love it, too. Loaded with sausage, cheese, and the perfect combination of veggies, it is generous, hearty, and truly delicious. Save this one for the next time you host a crowd for breakfast or brunch. We are already planning to add it to our favorites list of holiday breakfast recipes (alongside our favorite baked French toast and cinnamon rolls).

  • Tater Tots: While we have a recipe for homemade tater tots on the blog, we usually just pick up a bag of them for this casserole. A medium-to-large bag is perfect for lining the bottom of a large baking dish (like a 9×13-inch pan).
  • Sausage: We love the sausage in this recipe and start with bulk sausage (or homemade breakfast sausage if we have some in the freezer). This way, it cooks down into crispy, browned crumbles in a skillet. If you’d prefer bacon, see our method for cooking bacon in the oven, which is perfect for larger batches. We love how easily this breakfast tater tot casserole comes together in just a few simple steps, and how delicious it turns out. Here’s what to expect:

  1. Bake the tater tots on a baking sheet until crispy.
  2. Line up the crispy tots along the bottom of a large baking dish to form a crust.
  3. Brown the sausage, then cook the bell pepper and onion until sweet.
  4. Scatter the cooked sausage, peppers, and onions over the tater tot crust.
  5. Sprinkle with cheese, then pour in the whisked eggs and cream.
  6. Bake until the eggs are set (35 to 40 minutes).

Tip 1: Toss the tater tots in Cajun seasoning. While you can definitely just use the tots as is, try tossing them in a tablespoon of Cajun seasoning before baking for a little extra spice. This adds a lot of flavor that works so nicely with the eggs and sausage.

Tip 2: Cook the sausage and veggies before adding them. Start the sausage in a skillet and cook it, breaking it apart with a spoon, until browned and crispy. Transfer the cooked sausage to a plate, then use the rendered fat to cook the onion and bell pepper until soft. This step adds an extra 10 minutes, but it is so worth it.

Tip 4: Shimmy the baking dish before baking. Once you pour over the egg mixture, shimmy the dish a few times just before sliding the casserole into the oven to make sure egg fills all the nooks and crannies.

  • Cook the meat and veggies early. You can brown the sausage and sauté the onions and bell peppers the day before. Let the mixture cool completely, then store it in an airtight container in the fridge overnight.
  • Whisk the eggs the night before. Combine your eggs and cream in a bowl or large measuring cup, cover tightly, and refrigerate until morning.

In this easy breakfast casserole, you’ll line your baking dish with crispy baked tater tots, then pile in sausage, veggies, cheese, and eggs. It’s hearty and absolutely perfect for entertaining a crowd.

You Will Need

1 (24-ounce) bag tater tots

1 tablespoon Cajun seasoning

1 pound (450 g) bulk pork breakfast sausage (try homemade breakfast sausage)

1 tablespoon butter

1 red bell pepper, finely chopped

1 green bell pepper, finely chopped

1 medium onion, finely chopped

10 large eggs

1 ½ cups (360 ml) heavy cream

¼ teaspoon fine sea salt, plus more for the vegetables

¼ teaspoon freshly ground black pepper, plus more for the vegetables

6 ounces (170 g) sharp Cheddar, shredded (about 1 ½ cups)

Directions

    1Heat the oven to 425°F (220°C). Line a baking sheet with parchment paper. Then grease a 9-by-13-inch baking dish and set it aside.

    2Pile the tater tots on the baking sheet. Add the Cajun seasoning and toss to coat. Spread into a single layer and bake until hot and beginning to crisp, 25 to 30 minutes.

    3While the tots bake, brown the sausage in a large skillet over medium heat, breaking it into crumbles until crispy in spots, 5 to 6 minutes. Use a slotted spoon to remove the sausage, leaving the rendered fat in the skillet. (If there is excess fat, drain all but 1 tablespoon).

    4Add the butter, bell peppers, and onions to the skillet. Season with a pinch of salt and pepper; cook until the onions are soft and smell sweet, 6 to 8 minutes. Remove from the heat.

    5In a medium bowl, whisk the eggs, cream, ¼ teaspoon of salt, and ¼ teaspoon of black pepper until well blended.

    6Lower the oven temperature to 375°F. Line the bottom (and sides, if possible) of the prepared baking dish with the seasoned tater tots to create a crust. Scatter the sausage, vegetables, and 1 cup of the cheese over the tots. Pour the egg mixture over the top and give the dish a little shimmy to remove any air bubbles. Top with the remaining ½ cup of cheese.

    7Bake until the eggs are set and no longer jiggle in the center, 35 to 40 minutes. Let rest for 5 to 10 minutes before slicing.

  • Storing: Let cool, then slice into squares. Store, covered, in the refrigerator for up to 4 days or in the freezer for up to 3 months. To serve, reheat in the microwave or place in a toaster oven at 325°F for about 20 minutes, or until heated through.
  • ​To make this vegetarian, cook 8 ounces (225 g) of sliced mushrooms in the skillet with the peppers and onions. Use 1 to 2 tablespoons of olive oil or butter to cook the veggies since you won’t have the sausage fat.
